Description

A delightful and moist cake perfect for Easter celebrations, featuring layers of pineapple and whipped cream.


Ingredients

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sugar
  • 1 cup heavy whipping cream
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the yellow cake mix according to package instructions and bake in a 9×13 inch pan.
  3. Once the cake is baked and cooled, poke holes in the top using a fork.
  4. In a bowl, mix the drained crushed pineapple with sugar and spread it over the cake.
  5. In another bowl, whip the heavy cream until stiff peaks form, then fold in the vanilla extract.
  6. Spread the whipped cream over the pineapple layer.
  7. Top with shredded coconut and chopped pecans.
  8. Refrigerate for at least 2 hours before serving.
