			- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1 cup oats
- 1/4 cup flour
- 1/4 cup butter, softened
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crusts in the mini pans.
- In a separate bowl, combine diced apples, cinnamon, and brown sugar.
- In another bowl, mix oats, flour, and softened butter until crumbly.
- Layer the apple mixture on top of the cream cheese layer, then sprinkle the oat mixture on top.
- Bake for 25-30 minutes or until set.
- Let cool before serving.
Notes
- Serve with whipped cream for added flavor.
- Can be made a day in advance and stored in the refrigerator.
- Adjust the sweetness of the apples based on preference.
