  • 4 cups of chicken or vegetable broth
  • 1 medium onion, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 1 cup of heavy cream
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast in the oven for about 30 minutes until soft.
  3. In a large pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the roasted garlic cloves to the pot, squeezing them out of their skins.
  5. Pour in the chicken or vegetable broth and add thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the heavy cream and heat through.
  9. Serve hot, garnished with fresh parsley.
