- 1 head of garlic, cloves separated
- 4 cups of chicken or vegetable broth
- 1 medium onion, chopped
- 2 tablespoons of olive oil
- 1 teaspoon of thyme
- Salt and pepper to taste
- 1 cup of heavy cream
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the head of garlic in aluminum foil and roast in the oven for about 30 minutes until soft.
- In a large pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the roasted garlic cloves to the pot, squeezing them out of their skins.
- Pour in the chicken or vegetable broth and add thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and heat through.
- Serve hot, garnished with fresh parsley.

- For a vegan version, substitute heavy cream with coconut cream.
