- 1 cup of diced onions
- 1 cup of diced celery
- 1/2 cup of apple cider vinegar

Instructions
- Wash and boil the potatoes until tender, then let them cool.
- Peel and slice the cooled potatoes into bite-sized pieces.
- In a large bowl, combine the diced onions and celery.
- In a separate bowl, whisk together the apple cider vinegar, vegetable oil, sugar, salt, and pepper.
- Pour the dressing over the potatoes and mix gently to combine.
- Chill the salad in the refrigerator for at least an hour before serving.
- Garnish with fresh parsley before serving.
