A delicious and easy-to-make Italian onion soup topped with melted Fontina cheese.

- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cups beef or vegetable broth
- 1 cup dry white wine
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup Fontina cheese, grated
- Baguette slices, for serving
Instructions
- In a large pot, heat the olive oil and butter over medium heat.
- Add the sliced onions and cook until they are caramelized, about 20-25 minutes.
- Pour in the white wine and let it simmer for 5 minutes.
- Add the broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- Preheat the oven to 350°F (175°C).
- Pour the soup into oven-safe bowls, top with baguette slices and sprinkle with Fontina cheese.
- Bake in the oven for 10-15 minutes, or until the cheese is bubbly and golden.
- Serve hot and enjoy!

- For a vegetarian version, use vegetable broth.
- Feel free to add other herbs like rosemary or basil for extra flavor.
