- 1 can (15 oz) pumpkin puree
- 1 cup rolled oats
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup melted butter
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine pumpkin puree, rolled oats, brown sugar, cinnamon, nutmeg, and salt.
- Add melted butter, milk, and vanilla extract to the mixture and stir until well combined.
- If using, fold in the chopped nuts.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
- Serve warm with whipped cream or ice cream for added flavor.
- This cake can be stored in the refrigerator for up to 3 days.
- Feel free to add chocolate chips for a sweeter version.
