  • 1 cup fresh cranberries
  • 2 apples, cored and diced
  • 1 cup bread crumbs
  • 1 onion, chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt the butter and sauté the onion until translucent.
  3. In a large bowl, combine the sautéed onion, cranberries, apples, bread crumbs, salt, pepper, thyme, and cinnamon.
  4. Stuff the mixture into the cavity of the chicken.
  5. Place the chicken in a roasting pan and season the outside with salt and pepper.
  6. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
