- 1 whole chicken (about 4–5 pounds)
- 1 cup fresh cranberries
- 2 apples, cored and diced
- 1 cup bread crumbs
- 1 onion, chopped
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter and sauté the onion until translucent.
- In a large bowl, combine the sautéed onion, cranberries, apples, bread crumbs, salt, pepper, thyme, and cinnamon.
- Stuff the mixture into the cavity of the chicken.
- Place the chicken in a roasting pan and season the outside with salt and pepper.
- Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
