- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 package (16 ounces) gnocchi
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the crushed tomatoes and vegetable broth, bringing the mixture to a boil.
- Once boiling, add the gnocchi and dried basil.
- Reduce heat and simmer for about 5-7 minutes, or until the gnocchi are cooked.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
