- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup eggnog
- 1 cup powdered sugar (for frosting)
- 1/4 cup eggnog (for frosting)
- 1/2 teaspoon ground cinnamon (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, vanilla extract, and eggnog to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- For the frosting, mix powdered sugar, eggnog, and cinnamon until smooth.
- Spread frosting on the bottom of one cookie and sandwich it with another cookie.
Notes
- For a stronger eggnog flavor, add more eggnog to the frosting.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to sprinkle additional cinnamon on top of the frosting for extra flavor.
