Ingredients

- 2 medium eggplants, sliced
- 4 large tomatoes, sliced
- 1 cup grated cheese (such as mozzarella or parmesan)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add sliced eggplants to the skillet and cook until slightly softened, about 5 minutes.
- In a baking dish, layer half of the eggplant slices, followed by half of the tomato slices.
- Sprinkle with salt, pepper, and half of the cheese.
- Repeat the layers with the remaining eggplant, tomatoes, and cheese.
- Sprinkle dried oregano on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a vegan version, omit the cheese or use a plant-based alternative.
- Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
