Description

Ingredients

  • 6 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, sun-dried tomatoes, salt, and pepper.
  3. Grease a baking dish with olive oil.
  4. Crack the eggs into the baking dish, spacing them evenly.
  5. Spoon the ricotta mixture over the eggs.
  6. Drizzle with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
  8. Remove from the oven and let cool slightly before serving.
