- 1/4 cup sun-dried tomatoes, chopped

Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, sun-dried tomatoes, salt, and pepper.
- Grease a baking dish with olive oil.
- Crack the eggs into the baking dish, spacing them evenly.
- Spoon the ricotta mixture over the eggs.
- Drizzle with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
- Remove from the oven and let cool slightly before serving.
