- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey
- 1/2 cup chopped nuts (walnuts, almonds, or pecans)
- 1/4 cup dark chocolate chips
- 1/4 cup dried fruit (raisins or cranberries)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, almond butter, honey, and vanilla extract until well combined.
- Add in the chopped nuts, dark chocolate chips, dried fruit, and salt. Stir until evenly distributed.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- Feel free to customize with your favorite nuts and dried fruits.
- For a vegan option, substitute honey with maple syrup.
