Description

A refreshing and flavorful pasta salad featuring feta cheese, cranberries, and a zesty lemon vinaigrette.


Ingredients

  • 8 oz rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the rigatoni pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled rigatoni, feta cheese, cranberries, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the vinaigrette.
  4. Pour the vinaigrette over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
