A fresh and flavorful salad combining feta cheese, pomegranate seeds, and couscous.
Ingredients

- 1 cup couscous
- 1 1/4 cups water
- 1 cup pomegranate seeds
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a saucepan, bring water to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- In a large bowl, combine cooled couscous, pomegranate seeds, feta cheese, parsley, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for later use.
Notes
- For added flavor, consider adding chopped mint or walnuts.
- This salad can be made a day in advance for better flavor.
