Description
A delicious and spicy dish featuring meatballs served over coconut rice, perfect for a spring dinner.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/4 cup soy sauce
- 1/4 cup sweet chili sauce
- 1 can coconut milk (13.5 oz)
- 2 cups jasmine rice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix ground beef, breadcrumbs, green onions, egg, garlic, ginger, salt, and pepper.
- Form the mixture into meatballs and place them on a baking sheet.
- In a separate bowl, combine soy sauce and sweet chili sauce, then brush over the meatballs.
- Bake the meatballs for 20-25 minutes until cooked through.
- Meanwhile, rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and coconut milk, and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is tender.
- Serve the meatballs over the coconut rice and garnish with additional green onions if desired.

Notes
- For a gluten-free option, use gluten-free breadcrumbs and soy sauce.
- Adjust the level of spiciness by adding more or less sweet chili sauce.
- This dish can be made ahead and reheated for an easy dinner.
