Ingredients

  • 8 large flour tortillas
  • 12 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked potatoes (diced or shredded)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, sauté the diced onions and bell peppers until soft.
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Pour the eggs into the skillet and scramble until fully cooked.
  4. Add the cooked sausage or bacon and potatoes to the egg mixture, stirring to combine.
  5. Lay out the tortillas and evenly distribute the egg mixture among them.
  6. Sprinkle cheese on top of the filling.
  7. Roll up each tortilla tightly, folding in the sides as you go.
  8. Wrap each burrito in foil or plastic wrap and place in the freezer.
  9. To reheat, unwrap and microwave for 2-3 minutes or until heated through.
