Ingredients

- 8 large flour tortillas
- 12 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked and crumbled sausage or bacon
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked potatoes (diced or shredded)
- Salt and pepper to taste
Instructions
- In a large skillet, sauté the diced onions and bell peppers until soft.
- In a bowl, whisk the eggs and season with salt and pepper.
- Pour the eggs into the skillet and scramble until fully cooked.
- Add the cooked sausage or bacon and potatoes to the egg mixture, stirring to combine.
- Lay out the tortillas and evenly distribute the egg mixture among them.
- Sprinkle cheese on top of the filling.
- Roll up each tortilla tightly, folding in the sides as you go.
- Wrap each burrito in foil or plastic wrap and place in the freezer.
- To reheat, unwrap and microwave for 2-3 minutes or until heated through.
