Description

A delicious and crunchy chicken salad infused with the tangy flavor of dill pickles, perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup dill pickles, diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the shredded chicken and diced dill pickles.
  2. In a separate bowl, mix together the mayonnaise, Greek yogurt, and Dijon mustard until smooth.
  3. Add the chopped red onion and fresh dill to the mayonnaise mixture and stir to combine.
  4. Pour the dressing over the chicken and pickles, and mix until everything is well coated.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Serve on a bed of greens, in a sandwich, or with crackers.
