- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, cumin, and paprika, cooking for an additional minute.
- Add the rinsed rice to the saucepan and stir to coat the rice with the oil and spices.
- Pour in the chicken or vegetable broth and add salt to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro if desired.
Notes
- For extra flavor, you can add diced tomatoes or bell peppers.
- Make sure to use a tight-fitting lid to prevent steam from escaping.
