Description

A hearty and flavorful soup that combines the rich taste of beef short ribs with the classic flavors of French onion soup.

Ingredients

Scale
  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 slices of baguette
  • 2 cups Gruyère cheese, shredded

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef short ribs and brown on all sides.
  2. Remove the ribs and set aside. In the same pot, add the sliced onions and cook until caramelized, about 20-25 minutes.
  3. Add the minced garlic and cook for an additional 2 minutes.
  4. Deglaze the pot with white wine, scraping up any browned bits from the bottom.
  5. Add the beef broth, thyme, bay leaf, and the browned short ribs back into the pot. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
  7. Remove the short ribs, shred the meat, and discard the bones. Return the shredded beef to the soup.
  8. Preheat the oven to 350°F (175°C). Place baguette slices on a baking sheet and toast until golden brown.
  9. To serve, ladle the soup into bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese. Place under the broiler until the cheese is bubbly and golden.
