A hearty and flavorful soup that combines the rich taste of beef short ribs with the classic flavors of French onion soup.

- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup dry white wine
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 8 slices of baguette
- 2 cups Gruyère cheese, shredded
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef short ribs and brown on all sides.
- Remove the ribs and set aside. In the same pot, add the sliced onions and cook until caramelized, about 20-25 minutes.
- Add the minced garlic and cook for an additional 2 minutes.
- Deglaze the pot with white wine, scraping up any browned bits from the bottom.
- Add the beef broth, thyme, bay leaf, and the browned short ribs back into the pot. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
- Remove the short ribs, shred the meat, and discard the bones. Return the shredded beef to the soup.
- Preheat the oven to 350°F (175°C). Place baguette slices on a baking sheet and toast until golden brown.
- To serve, ladle the soup into bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese. Place under the broiler until the cheese is bubbly and golden.
Notes
- For a richer flavor, use homemade beef broth.
- Feel free to add additional herbs like rosemary or parsley for extra flavor.
- This soup can be made a day in advance and reheated before serving.
