A hearty and flavorful soup that combines the rich taste of beef short ribs with the sweetness of caramelized onions.


Ingredients

  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 slices of baguette
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the short ribs and brown on all sides.
  2. Remove the short ribs and set aside. In the same pot, add the sliced onions and cook until caramelized, about 20-25 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Pour in the white wine and scrape the bottom of the pot to deglaze.
  5. Add the beef broth, thyme, bay leaf, and the browned short ribs back into the pot.
  6. Bring to a boil, then reduce heat and let simmer for 2-3 hours until the meat is tender.
  7. Remove the short ribs, shred the meat, and discard the bones. Return the shredded meat to the soup.
  8. Season with salt and pepper to taste.
  9. To serve, ladle the soup into bowls, top with a slice of baguette, and sprinkle with Gruyère cheese. Broil until the cheese is bubbly and golden.

  • For a richer flavor, use homemade beef broth.
  • Feel free to add additional herbs like rosemary or parsley for extra flavor.
