Ingredients

- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup dry white wine
- 2 tablespoons olive oil
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup Gruyère cheese, shredded
- Crusty bread slices
Instructions
- Heat olive oil in a large pot over medium heat. Add the short ribs and brown on all sides. Remove and set aside.
- Add onions to the same pot and cook until caramelized, about 30 minutes, stirring occasionally.
- Add garlic and cook for 1 more minute.
- Pour in the wine, scrape the bottom of the pot, and reduce by half.
- Add beef broth, thyme, bay leaf, salt, and pepper. Return the short ribs to the pot.
- Bring to a boil, then reduce to a simmer and cook for 120-180 minutes until the beef is tender.
- Remove ribs, shred the meat, and discard bones.
- Serve soup topped with shredded Gruyère cheese and crusty bread.
Notes
