Description

A hearty and soul-soothing soup made with tender beef short ribs, caramelized onions, and Gruyère cheese, perfect for cold evenings and family gatherings.

Ingredients

Scale
  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, shredded
  • Crusty bread slices

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the short ribs and brown on all sides. Remove and set aside.
  2. Add onions to the same pot and cook until caramelized, about 30 minutes, stirring occasionally.
  3. Add garlic and cook for 1 more minute.
  4. Pour in the wine, scrape the bottom of the pot, and reduce by half.
  5. Add beef broth, thyme, bay leaf, salt, and pepper. Return the short ribs to the pot.
  6. Bring to a boil, then reduce to a simmer and cook for 120-180 minutes until the beef is tender.
  7. Remove ribs, shred the meat, and discard bones.
  8. Serve soup topped with shredded Gruyère cheese and crusty bread.

Notes

Sear the ribs for added flavor, and always taste your soup and adjust seasonings as needed.
