- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) French onion soup
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup shredded cheese (Swiss or Gruyere)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and season the chicken breasts with salt and pepper.
- Brown the chicken on both sides, about 4-5 minutes per side.
- In a baking dish, combine the rice, French onion soup, and chicken broth.
- Place the browned chicken on top of the rice mixture.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For added flavor, you can sauté some onions before adding them to the dish.
- This recipe can be made ahead of time and stored in the refrigerator before baking.
