Fresh Mediterranean Quinoa Bowls with Hummus

Description

A vibrant and nutritious bowl filled with quinoa, fresh vegetables, and creamy hummus, perfect for a healthy meal.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup hummus
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
  5. Add the cooked quinoa to the vegetable mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the quinoa and vegetables, and toss to combine.
  8. Serve the quinoa mixture in bowls topped with a dollop of hummus.
