Description

A refreshing and easy-to-make Frito Corn Salad perfect for spring dinners and cookouts.


Ingredients

Scale
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 cup of diced bell peppers
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheese
  • 1 cup of Fritos corn chips
  • 1/2 cup of ranch dressing
  • 1/4 cup of chopped green onions


Instructions

  1. In a large bowl, combine the corn, black beans, bell peppers, tomatoes, and cheese.
  2. Add the ranch dressing and mix well until all ingredients are coated.
  3. Just before serving, fold in the Fritos and green onions.
  4. Serve chilled or at room temperature.

  • For a spicier kick, add jalapeños.
