Description
A refreshing and easy-to-make Frito Corn Salad perfect for spring dinners and cookouts.
Ingredients

- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1 cup of diced bell peppers
- 1 cup of diced tomatoes
- 1 cup of shredded cheese
- 1 cup of Fritos corn chips
- 1/2 cup of ranch dressing
- 1/4 cup of chopped green onions
Instructions
- In a large bowl, combine the corn, black beans, bell peppers, tomatoes, and cheese.
- Add the ranch dressing and mix well until all ingredients are coated.
- Just before serving, fold in the Fritos and green onions.
- Serve chilled or at room temperature.

Notes
- For a spicier kick, add jalapeños.
- This salad can be made a few hours in advance; just add Fritos right before serving to keep them crunchy.
