- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar
- ¼ tsp salt
- 1 large egg yolk
- ¼ cup ice-cold water
- 2 cups whole milk
- ¾ cup granulated sugar (divided)
- 6 large egg yolks
- 2 tsp pure vanilla extract
- 2 cups mixed seasonal fruits (e.g., strawberries, kiwis, blueberries)
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, sugar, and salt in a bowl.
- Cut in cold butter until crumbly.
- Add egg yolk and ice water; mix until dough forms.
- Press dough into a tart pan evenly.
- Bake for 20 minutes until golden brown.
- Let cool.
- Warm milk and half the sugar in a saucepan over medium heat.
- Whisk remaining sugar with egg yolks until pale.
- Gradually add warm milk to yolks while whisking continuously to prevent scrambling.
- Return mixture to the saucepan and stir over low heat until thickened (8-10 minutes).
- Remove from heat and stir in vanilla extract; cool before pouring into the crust.
- Arrange sliced fruits artistically on top of the custard.
Notes
For a healthier option, consider using sugar substitutes for the custard if needed.
