Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture, mixing well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
- Fold in the mashed fruit until evenly distributed.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- For the frosting, beat together the powdered sugar, milk, and vanilla extract until smooth.
- Spread frosting on the flat side of one cookie and sandwich it with another cookie.
- Repeat with the remaining cookies and frosting.
