			- 2 pounds baby potatoes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, melt the butter and mix in the minced garlic.
- Add the halved potatoes to the bowl and toss to coat them in the garlic butter.
- Spread the potatoes on a baking sheet in a single layer.
- Season with salt and pepper.
- Bake for 25-30 minutes or until golden brown and tender.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, add some grated Parmesan cheese before serving.
- These potatoes can be made ahead of time and reheated in the oven.
