Description

Ingredients

  • 2 medium eggplants, cut into cubes
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cubed eggplant and stir to coat with the garlic oil.
  4. Cook for about 5-7 minutes, stirring occasionally, until the eggplant is tender.
  5. Stir in soy sauce, rice vinegar, sugar, and red pepper flakes.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Season with salt and pepper to taste before serving.
