Description

A delicious and comforting dish featuring tender garlic herb chicken served with creamy mashed potatoes and roasted carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Place the chicken on a baking sheet and roast for 25-30 minutes until cooked through.
  4. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and mash them with heavy cream and butter until creamy.
  6. On another baking sheet, toss the carrots with honey, salt, and pepper, and roast for 20 minutes.
  7. Serve the chicken with creamy mash and roasted carrots on the side.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
  • Feel free to add other vegetables to roast alongside the carrots.
