Description

A delightful pasta dish featuring garlic shrimp, fresh spinach, and linguine, perfect for weeknight dinners.


Ingredients

Scale
  • 12 ounces linguine or fettuccine
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil, plus more for drizzling
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (or to taste)
  • 5 ounces fresh spinach
  • 1/2 cup finely chopped fresh parsley
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt to taste
  • Black pepper to taste
  • 1 cup reserved pasta cooking water


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the linguine and cook according to package directions until al dente.
  3. Before draining, reserve at least 1 cup of the starchy pasta cooking water.
  4. Drain the pasta and set aside.
  5. Pat the shrimp dry with paper towels.
  6. Season lightly with salt and pepper.
  7. Heat 1 tablespoon of olive oil in a large skillet or nonstick pan over medium high heat.
  8. Add the shrimp in a single layer and cook for 1 to 2 minutes per side, until pink and just cooked through.
  9. Remove the shrimp from the pan and set aside.
  10. Reduce the heat to medium.
  11. Add the remaining 1 tablespoon of olive oil to the same skillet.
  12. Add the minced garlic and red pepper flakes.
  13. Cook for about 1 minute, stirring constantly, until fragrant.
  14. Add the fresh spinach to the skillet.
  15. Cook, stirring occasionally, until the spinach wilts down, about 2 to 3 minutes.
  16. Add the cooked linguine to the skillet with the spinach and garlic.
  17. Pour in about 1/2 cup of the reserved pasta cooking water.
  18. Toss vigorously with tongs, allowing the starch from the pasta water to emulsify with the olive oil.
  19. Return the cooked shrimp to the pan and add fresh parsley and 1/4 cup of grated Parmesan cheese.
  20. Toss everything together until well combined and the shrimp are warmed through.
  21. Taste and adjust seasoning with additional salt and black pepper if needed.
  22. Serve immediately in bowls, topped with extra grated Parmesan cheese and an optional drizzle of fresh olive oil.

Notes

For added flavor, use fresh ingredients and adjust red pepper flakes to taste.
