A fun and spooky twist on traditional quesadillas, perfect for Halloween celebrations.
Ingredients

- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1/2 cup black olives, sliced
- 1/2 cup bell peppers, diced
- Cooking spray or olive oil
Instructions
- Preheat a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
- Use a ghost-shaped cookie cutter to cut out ghost shapes from the second tortilla and place it on top of the cheese.
- Cook for 2-3 minutes until the cheese starts to melt.
- Carefully flip the quesadilla and cook for another 2-3 minutes until golden brown.
- Remove from the skillet and repeat with the remaining tortillas and cheese.
- Once all quesadillas are cooked, use the black olives to create eyes on the ghost shapes.
- Cut into wedges and serve warm.
Notes
- Feel free to add other fillings like chicken or beans for extra flavor.
- Serve with salsa or guacamole for dipping.
- These can be made ahead of time and reheated in the oven.
