Description

A nutritious and energizing snack made with ginger and turmeric.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tablespoon ground ginger
  • 1 tablespoon ground turmeric
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut
  • 1/4 cup chopped nuts (optional)
  • Pinch of salt

Instructions

  1. In a large bowl, combine rolled oats, almond butter, and honey or maple syrup.
  2. Add ground ginger, ground turmeric, chia seeds, shredded coconut, and chopped nuts if using.
  3. Mix all ingredients until well combined.
  4. Form the mixture into small balls, about 1 inch in diameter.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.
