- 2 medium zucchinis
- 2 large potatoes
- 1/4 cup milk (or dairy-free alternative)
- 2 tablespoons butter (or olive oil for vegan option)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Peel and chop the potatoes into small chunks.
- Slice the zucchinis into rounds.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- In a separate pot, steam the zucchini until soft, about 5-7 minutes.
- Drain the potatoes and return them to the pot.
- Add the steamed zucchini, milk, and butter to the potatoes.
- Mash everything together until smooth and creamy.
- Season with salt, pepper, and Parmesan cheese if using.
- Serve warm as a side dish.
Notes
- For a vegan version, substitute butter with olive oil and use a dairy-free milk.
- Adjust the consistency by adding more milk if needed.
