- 1 bunch of fresh asparagus, trimmed
- 4 oz goat cheese, crumbled
- 2 cups mixed greens
- 1/4 cup walnuts, toasted
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the trimmed asparagus on a baking sheet and drizzle with olive oil, salt, and pepper.
- Roast the asparagus in the oven for about 10-15 minutes until tender.
- In a large bowl, combine the mixed greens, roasted asparagus, crumbled goat cheese, and toasted walnuts.
- In a small bowl, whisk together the olive oil and balsamic vinegar.
- Drizzle the dressing over the salad and toss gently to combine.
