- 12 mini sweet peppers
- 8 oz goat cheese, softened
- 1/4 cup cream cheese, softened
- 1/4 cup fresh herbs (such as basil, parsley, or chives), chopped
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the mini peppers in half lengthwise and remove the seeds.
- In a bowl, mix together the goat cheese, cream cheese, herbs, garlic, salt, and pepper until well combined.
- Stuff each pepper half with the cheese mixture.
- Place the stuffed peppers on a baking sheet and bake for 15-20 minutes, or until the peppers are tender and the cheese is slightly golden.
- Remove from the oven and let cool slightly before serving.
