			- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 25-30 minutes or until tender and slightly golden.
- Remove from the oven and let cool slightly.
- Top each sweet potato round with crumbled feta cheese and a drizzle of honey.
- Garnish with fresh thyme before serving.
Notes
- For a spicier kick, add a sprinkle of red pepper flakes on top.
- These can be served warm or at room temperature.
- Feel free to substitute goat cheese for feta if preferred.
