Ingredients

- 4 chicken thighs
- 2 cups of chicken broth
- 1 cup of long-grain rice
- 1 lemon (juiced and zested)
- 2 tablespoons of olive oil
- 2 cloves of garlic (minced)
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken thighs with salt, pepper, and oregano, then add them to the skillet.
- Cook the chicken for about 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add the rice and stir for 2 minutes until slightly toasted.
- Pour in the chicken broth, lemon juice, and lemon zest, then bring to a boil.
- Return the chicken to the skillet, cover, and reduce heat to low.
- Simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
- This dish pairs well with a side of Greek salad.
