  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken thighs with salt, pepper, and oregano, then add them to the skillet.
  3. Cook the chicken for about 5-7 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add the rice and stir for 2 minutes until slightly toasted.
  7. Pour in the chicken broth, lemon juice, and lemon zest, then bring to a boil.
  8. Return the chicken to the skillet, cover, and reduce heat to low.
  9. Simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  10. Garnish with fresh parsley before serving.
