Ingredients

- 1 lb beef, cut into cubes
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the diced tomatoes, beef broth, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beef is tender.
- Add the orzo pasta and cook for an additional 10-12 minutes, or until the pasta is al dente.
- Serve hot, garnished with fresh parsley.
