- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups chicken broth
- 1/4 cup fresh lemon juice
- 1 lemon, sliced
- Fresh parsley for garnish
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper. Mix well.
- Form the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, bring the chicken broth to a simmer over medium heat.
- Add the meatballs to the simmering broth and cook for about 15 minutes, or until cooked through.
- Stir in the lemon juice and lemon slices, and let it simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a gluten-free version, use gluten-free breadcrumbs.
- Adjust the amount of lemon juice to taste.
- These meatballs can also be served with rice or pasta.
