  • 4 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 1 lemon, sliced

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper. Mix well.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, bring the chicken broth to a simmer over medium heat.
  4. Add the meatballs to the simmering broth and cook for about 15 minutes, or until cooked through.
  5. Stir in the lemon juice and lemon slices, and let it simmer for an additional 5 minutes.
