A delicious and refreshing recipe for grilled shrimp marinated in coconut and lime.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 1/2 cup coconut milk
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a bowl, whisk together coconut milk, lime juice, honey, garlic, salt, and pepper.
- Add the shrimp to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers.
- Grill the shrimp for 2-3 minutes on each side, or until they are opaque and cooked through.
- Remove from the grill and sprinkle with fresh cilantro before serving.
Notes
- For extra flavor, add lime zest to the marinade.
- Serve with a side of rice or a fresh salad.
- Can be made with other seafood like scallops or fish.
