Instructions
- Whisk together olive oil, hot honey, lemon zest, salt, and pepper.
- Add chicken thighs and marinate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes per side, or until cooked through and slightly charred.
- Combine corn kernels, sour cream, lime juice, salt, and pepper in a separate bowl.
- Toss the corn salad gently to combine.
- Let chicken rest for a few minutes before slicing.
- Serve grilled hot honey chicken alongside the fresh corn salad.
