Description

Deliciously festive mini cheesecakes inspired by the Grinch, perfect for holiday gatherings.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1/2 cup green food coloring
  • 1 package graham cracker crumbs
  • 1/4 cup melted butter
  • Red candy hearts for decoration

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake cups.
  3. In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  4. Fold in the whipped cream and green food coloring until well combined.
  5. Pour the cheesecake mixture over the crust in each cup.
  6. Bake for 15-20 minutes until set, then let cool.
  7. Chill in the refrigerator for at least 2 hours before serving.
  8. Top with red candy hearts before serving.

Notes

  • Make sure the cream cheese is at room temperature for easier mixing.
  • Adjust the amount of food coloring to achieve your desired shade of green.
  • These can be made a day in advance for convenience.
