- 1 pound ground turkey
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and sauté until the onion is translucent.
- Add the ground turkey and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Stir in the orzo and cook according to package instructions, usually about 8-10 minutes.
- Add fresh spinach and stir until wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese if desired.
Notes
For added brightness, try adding a splash of lemon juice at the end.
