Description

A delicious and healthy skillet dish featuring ground turkey and fresh zucchini, perfect for a spring dinner.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add ground turkey, cook until browned.
  4. Stir in sliced zucchini and bell pepper, cook until tender.
  5. Add chickpeas and Italian seasoning, mix well.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 5 minutes, stirring occasionally.
