A hearty and flavorful pie made with tender beef and rich Guinness beer.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 1 cup Guinness beer
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 sheet puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
- Add the onions, carrots, and garlic, cooking until softened.
- Stir in the tomato paste, thyme, salt, and pepper.
- Pour in the Guinness beer and beef broth, bringing to a simmer.
- Cover and cook for 1.5 to 2 hours until the beef is tender.
- Transfer the beef mixture to a pie dish and let it cool slightly.
- Roll out the puff pastry and cover the beef mixture, sealing the edges.
- Brush the pastry with beaten egg.
- Bake for 25-30 minutes or until the pastry is golden brown.
Notes
- Serve with mashed potatoes or a side salad.
- Can be made a day in advance and reheated.
