A classic Irish-American dish, this Guinness Corned Beef Brisket is slow-cooked with vegetables and infused with rich flavor from Guinness beer.

- 4-5 lbs corned beef brisket
- 1 can (12 oz) Guinness beer
- 1 onion, quartered
- 2-3 cloves garlic, minced
- 2 carrots, sliced
- 2-3 potatoes, quartered
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 2 bay leaves
Instructions
- Preheat oven to 300°F (150°C).
- Place the corned beef brisket in a large Dutch oven.
- Pour the Guinness beer over the brisket.
- Add onion, garlic, carrots, potatoes, brown sugar, Worcestershire sauce, black pepper, and bay leaves.
- Cover the pot and roast in the oven for 3-4 hours, until the meat is tender.
- Remove the brisket, let it rest, then slice and serve with the vegetables.
Notes
For a richer flavor, consider marinating the corned beef in Guinness overnight.
