Description

A delightful fusion of Southern soul food and Asian influences, this Gumbo Fried Rice combines savory sausage, shrimp, and colorful vegetables in a comforting one-pot meal.


Ingredients

  • 1 cup Long Grain White Rice
  • 1.5 cups Chicken Broth
  • 1 cup Kielbasa or Andouille Sausage
  • 1 cup Shrimp
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalks Celery
  • 3 stalks Green Onions
  • 2 tablespoons Creole Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Turmeric
  • to taste Salt
  • to taste Pepper
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 Eggs


Instructions

  1. Rinse the long grain white rice under cold water to remove excess starch.
  2. Combine rice and chicken broth in a rice cooker or saucepan, then cook according to package instructions until fluffy.
  3. Slice the kielbasa or Andouille sausage into bite-sized pieces.
  4. Dice the onion, green bell pepper, and celery into small, uniform pieces.
  5. Heat 3 tablespoons of extra virgin olive oil in a large skillet over medium heat.
  6. Add the sliced sausage to the skillet and sauté until slightly crispy and browned, about 4-5 minutes.
  7. Toss in the diced onion, bell pepper, and celery to the pan, and sauté for another 3-4 minutes, until vegetables are tender.
  8. Stir in the shrimp and cook until they turn pink and opaque, about 3 minutes.
  9. Sprinkle in the Creole seasoning, garlic powder, ground turmeric, salt, and pepper; stir well to combine all flavors.
  10. Add the cooked rice to the skillet and fold it into the sausage and vegetable mixture until fully blended.
  11. Create a well in the center of the rice mixture and crack the two eggs into this space.
  12. Scramble the eggs gently in the well until just set, then mix them into the rice.
  13. Fold in the chopped green onions and remove from heat. Let it rest for a couple of minutes, allowing the flavors to meld.
  14. Taste and adjust seasoning as necessary before serving.
