- 1 cup Long Grain White Rice
- 1.5 cups Chicken Broth
- 1 cup Kielbasa or Andouille Sausage
- 1 cup Shrimp
- 1 medium Onion
- 1 medium Green Bell Pepper
- 2 stalks Celery
- 3 stalks Green Onions
- 2 tablespoons Creole Seasoning
- 1 teaspoon Garlic Powder
- 1 teaspoon Ground Turmeric
- to taste Salt
- to taste Pepper
- 3 tablespoons Extra Virgin Olive Oil
- 2 Eggs
Instructions
- Rinse the long grain white rice under cold water to remove excess starch.
- Combine rice and chicken broth in a rice cooker or saucepan, then cook according to package instructions until fluffy.
- Slice the kielbasa or Andouille sausage into bite-sized pieces.
- Dice the onion, green bell pepper, and celery into small, uniform pieces.
- Heat 3 tablespoons of extra virgin olive oil in a large skillet over medium heat.
- Add the sliced sausage to the skillet and sauté until slightly crispy and browned, about 4-5 minutes.
- Toss in the diced onion, bell pepper, and celery to the pan, and sauté for another 3-4 minutes, until vegetables are tender.
- Stir in the shrimp and cook until they turn pink and opaque, about 3 minutes.
- Sprinkle in the Creole seasoning, garlic powder, ground turmeric, salt, and pepper; stir well to combine all flavors.
- Add the cooked rice to the skillet and fold it into the sausage and vegetable mixture until fully blended.
- Create a well in the center of the rice mixture and crack the two eggs into this space.
- Scramble the eggs gently in the well until just set, then mix them into the rice.
- Fold in the chopped green onions and remove from heat. Let it rest for a couple of minutes, allowing the flavors to meld.
- Taste and adjust seasoning as necessary before serving.

Use fresh ingredients to enhance flavor and avoid overcooking the shrimp.
