- 8 oz elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 cup diced celery
- 1/2 cup chopped red onion
- 1/2 cup sweet pickle relish
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 hard-boiled eggs, chopped
- 1/2 cup diced bell pepper (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Cook the macaroni according to the package directions; drain and rinse under cold water.
- Combine in a large bowl mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
- Add the cooled macaroni, celery, red onion, sweet pickle relish, chopped eggs, and bell pepper (if using), and mix well.
- Taste and adjust the seasoning as needed.
- Cover and refrigerate for at least 1 hour before serving.
- Garnish with fresh parsley before serving.
Notes
Chill the salad after preparation for the best flavor. Undercook the macaroni slightly to prevent mushiness.
