- 1 bag (30 oz) frozen hashbrowns
- 8 large eggs
- 2 cups shredded cheese (cheddar or your choice)
- 1 cup milk
- 1 cup diced cooked ham or sausage (optional)
- 1 cup chopped bell peppers (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the frozen hashbrowns, eggs, milk, salt, and pepper.
- Add in the cheese, cooked meat, and bell peppers if using, and mix well.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes or until the casserole is set and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to customize with your favorite vegetables or meats.
- This casserole can be made ahead of time and stored in the refrigerator overnight before baking.
- Leftovers can be stored in the fridge for up to 3 days.
