Ingredients

  • 1 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 cup unsweetened shredded coconut
  • 1/2 cup dark chocolate chips
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • Whole almonds for topping

Instructions

  1. In a mixing bowl, combine almond butter, honey (or maple syrup), shredded coconut, sea salt, and vanilla extract until well mixed.
  2. Line a baking dish with parchment paper and spread the mixture evenly in the dish.
  3. Chill in the refrigerator for about 30 minutes until firm.
  4. Once firm, cut into bars or squares.
  5. Melt dark chocolate chips in a microwave or double boiler.
  6. Dip each bar into the melted chocolate and place back on the parchment paper.
  7. Top each bar with a whole almond.
  8. Refrigerate again until the chocolate is set.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Feel free to adjust the sweetness by adding more or less honey/maple syrup.
  • For a vegan option, use maple syrup and dairy-free chocolate chips.
