- 1 cup almond butter
- 1/4 cup honey or maple syrup
- 1 cup unsweetened shredded coconut
- 1/2 cup dark chocolate chips
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- Whole almonds for topping
Instructions
- In a mixing bowl, combine almond butter, honey (or maple syrup), shredded coconut, sea salt, and vanilla extract until well mixed.
- Line a baking dish with parchment paper and spread the mixture evenly in the dish.
- Chill in the refrigerator for about 30 minutes until firm.
- Once firm, cut into bars or squares.
- Melt dark chocolate chips in a microwave or double boiler.
- Dip each bar into the melted chocolate and place back on the parchment paper.
- Top each bar with a whole almond.
- Refrigerate again until the chocolate is set.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Feel free to adjust the sweetness by adding more or less honey/maple syrup.
- For a vegan option, use maple syrup and dairy-free chocolate chips.
